Baked salmon (college style)

1 1/2 tablespoons of Grey Poupon Dijon Mustard*
3 tablespoons mayonnaise
4 (6-ounce each) salmon fillets
olive oil
*Whatever is lying around after Saturday's game usually works too. I've done this with a variety of French's and Wal-Mart brand mustards and it tastes just as delicious.

1. Preheat the toaster oven to 350°F (176.6°C--I think)
2. Mix 1 and 1/2 Tablespoons of Grey Poupon Dijon Mustard and 3 Tablespoons of mayonnaise.
3. Season with salt and pepper. ( Jane's Crazy Mixed Up Salt is my all time favorite seasoning for just about every food)
4. Spread mixture on top of each fillet.
5. Pour olive oil on aluminum foil and a little on top of each fillet.
6. Loosely wrap the foil and place on baking tray of the toaster oven.
7. Bake for 20 to 25 minutes.

As a side dish I made Basmati rice with vegetable broth
and mashed turnips


It was delicious!
